
Preheat oven to 375F (190C). Peal, core and cut the apples into small pieces.
In a skillet, cook apples, butter, raisins, sugar and cinnamon over medium heat until apples are tender about 20-30 min.
In a cup, mix cornstarch and lemon juice.
Stir juice mixture into apple mixture and cook, stirring, until mixture thickens about 1 min. Remove skillet from heat.
Spread apple mixture over cookie crust. Break crumb topping into chunks and sprinkle over apple mixture.
Bake 35-40 min. Cool completely in pan on wire rack. To serve, cut into squares.
