(Ratatouille Ingredients)
Roasted red bell pepper, cleaned and chopped

Roasted green bell pepper, cleaned and chopped

Roasted yellow bell pepper, cleaned and chopped

garlic, finely chopped
4 cloves
shallots, finely chopped
3 large
red onion, finely chopped
1/2 large
zuchini, thinly sliced
1 medium 7 inch
stewed whole tomatoes, chopped
6 or one small can
crimini mushrooms, thinly sliced
6 medium
basil, fresh and finely chopped
1 T or 10 large leaves
tarragon, fresh and finely chopped
2 sprigs
Cast Iron Skillet

1.
If baking bread, start now.
2.
Put approximately 1T of olive oil in pan and heat.
3.
Add garlic, shallots, and onions.
4.
Cook until onions are transparent, stirring constantly.
5.
Add remainder of ingredients to mushrooms.
6.
Gently cook until almost all liquid is gone, about 15 min.
7.
Mix 1 T olive oil and herbs. Pour over top. Cover pan foil
8.
Put in oven with bread, about 350 degree oven, for 1 hr.
9.
Uncover and bake for another 15 min.
10.
Serve with bread and cheese.
11.
Serves two very hungry Americans with seconds.
