Kardi bhaja / Bamboo shoot cutlets
Bamboo shoots or bamboo sprouts are the edible parts of bamboo. This is a common food from western odisha during monsoon. There are many form of bamboo shoot such as dried, fresh and pickled. This dish is made from fresh bamboo shoot which is called as KARDI in Western Odisha. #bambooshoot
Ingredients

1 bowl bamboo shoots or kardi

1 bowl chopped onion

2 tsp chopped green chilies

7-8 crushed garlic

1/2 tsp ginger garlic paste

2 tsp rice flour or as needed until binding properly

1/2 tsp turmeric powder

1/2 tsp red chili powder

1/2 tsp garam masala powder

1/2 tsp meat masala powder

as needed Salt

2 tsp chopped coriander leaves
Cooking Instructions

Take a large bowl. Add 1 bowl of bamboo shoots, chopped onions, green chilies, crushed garlic, turmeric, red chili powder, garam masala powder, meat masala, salt, rice flour, coriander leaves and mix this well with your hand.

Heat a tawa and add some refined oil. Give the bamboo shoot mixture round shapes and add into the oil, press gently. Let it fry for 2 to 3 minutes and flip it. Gently press it and fry until both the sides gets golden brown and crispy.

Serve the bamboo shoot cutlets with hot rice.
