Sesame komatsuna greens

I had some komatsuna - sometimes called Japanese mustard spinach. It’s a dark leafy green - a bit like spinach with a bit of rocket. Other leafy greens eg tatsoi or pak choi would work well too.
Perfect as a side; we ate it with some tofu and noodles 😋
Ingredients

1 tsp toasted sesame oil

2-3 komatsuna - or tatsoi or other greens

2-3 tbsp water

1 clove garlic, peeled and crushed

2 cm ginger, peeled and grated

2 tsps soy sauce

1-2 tsps mirin

1 tsp sake - if you have it

1 tbsp sesame seeds, toasted
Cooking Instructions

Mix the garlic, ginger, soy sauce and mirin (and sake if using).

Preheat a flat pan (with a lid for later). Add the sesame oil. It will start to smoke pretty fast. Add the greens and then add the water. Cook for 2 mins - keep stirring; the leaves wilt.

Add the garlic/ soy/ mirin sauce. Stir well. Cover with lid and simmer for 2-3 mins.

Sprinkle with the toasted sesame seeds and serve. Enjoy 😋
