Lemon Cucumber Chutney

Dosakai (Indian name) or yellow cucumber is a big spherical cucumber that is popular in the state of Kerala. This simple chutney can be made in minutes and had with rice, dosa or Idli.

Ingredients

3-serving
  1. 1 Yellow Cucumber
  2. 1 Teaspoon Jaggery crushed
  3. 1/2 Teaspoon Tamarind Paste
  4. 1 Red Chilli
  5. 3 Green Chillies
  6. 1/2 Teaspoon Fenugreek seeds
  7. 1 Pinch Asafoetida ( hing)
  8. Coriander leaves (or curry leaves)
  9. 1 Carrot Grated (optional)

Method

  1. Add Photo

    Peel the cucumber, cut and remove the seeds. (You can also grate it)

  2. Add Photo

    Roast the fenugreek seeds and red chilli in a teaspoon of oil.

  3. Add Photo

    Transfer the roasted ingredients into your blender.

  4. Add Photo

    Add jaggery, green chillies, coriander leaves and tamarind paste for blending.

  5. Add Photo

    Run your blender and mix the ingredients without water.

  6. Add Photo

    Add the cut cucumber and blend it with the mixture.

  7. Add Photo

    You can now add the grated carrot if you wish.

  8. Add Photo

    Leave the mixture a bit coarse and transfer it to your serving dish.

  9. Add Photo

    Prepare the tempering with mustard seeds, curry leaves and a pinch of hing, and add it to the mixture.

    Your chutney is ready!
