Vegetable Stew

Vegetable stew is commonly eaten in South India with Appams or Iddiappams. Its a whole meal with a combination of colourful vegetables cooked in coconut milk. The thick, rich, creamy stew can also be eaten with boiled rice. Most of the vegetables used in this stew are always available in the fridge. easy to cook & I love the aromatic flavour & the creamy taste. I prepared it when my in-laws had come over and they loved it! I bought the ready to make Iddiappams.

Ingredients

  1. 1 onion big
  2. 10 - 15 shallots
  3. 2 Cups Carrot (cut in cubes)
  4. 2 Cups Potato (Cut in cubes)
  5. 1½ cup cauliflower florets of Cups
  6. 1 cup beans french Cup
  7. 4 Tablespoons Green Peas
  8. 3 chilly red
  9. 1 Teaspoon Ginger garlic & (crushed)
  10. 4 black pepper
  11. 1 inch Cinnamon
  12. 3 Cloves
  13. 1½ Cups coconut milk thin
  14. 1½ Cups coconut milk Thick ( measured in the universal baki
  15. 3 stems Curry leavesa
  16. To Taste salt

Method

    Add Photo

    Crushed the whole garam masala. In a deep bottom pan heat oil and sputter the garam masala, curry leaves & red chilly.Add ginger garlic and onion. Cook the onion until transparent.

    Combine all the vegetables & add them to the pan. add the thin coconut milk and bring it to a boil.Cook till all the vegetables are tender. Don't over cook these veggies.

    Add the thick coconut milk and cook for 2 more minutes. Serve with boiled rice, iddiappams or Appams.
