Pineapple Pachadi
Pineapple Pachadi is a side dish for rice. There are many types of pachadi and this one is sweet.
Ingredients

1/2 Pineapple

250 Grams Pumpkin Ripe

1/2 Tomato

1 banana Ripe

10 Grapes

2 Green chillies
-
1/4 Coconut

1 Teaspoon Mustard seeds

1 Teaspoon Turmeric powder

1 Teaspoon Red chilli powder

Jaggery (a lemon sized ball)

1/2 Cup Curd

2 chillies Red
-
Curry leaves

Prepare coconut milk by grinding grated coconut with a little water. Squeeze the milk out and keep it aside. Grind grated coconut by adding a little water in a mixer grinder. When the mixture is coarse, add mustard seeds and green chillies to it and grind to a fine paste.

Cook diced pineappe pieces, banana pieces, pumpkin pieces and tomato pieces in water by adding turmeric powder, red chilli powder, salt and curry leaves.

When the vegetables and fruits are cooked, add jaggery to it and cook till no water remains.

Add coconut milk, grinded coconut paste and curd to the vegetable mixture and boil.

When the mixture boils, turn off the flame and add grapes to it.

Heat oil in a pan and add mustard seeds to it. When the mustard seeds splutter, add red chillies and curry leaves and roast. Add this seasoning to the pachadi.
