Pachadi is a tasty recipe and it is used as a side dish for rice. It is usually made with vellarikka( Malayalam for Sambar cucumber), but along with it, you may also add other vegetables like pumpkin, ladies finger and tomatoes.
Chopped vegetables which include vellarikka (sambar cucumber), ladies finger and tomato are boiled in water to which salt, turmeric powder and tamarind water are added. Allow the vegetables to cook for around 15 minutes.
Meanwhile you can prepare the paste with grated coconut, mustard, red chillies (not roasted ones), green chillies and rice powder or boiled rice. Grind the above mixture in a mixer grinder to a fine paste.
Add the paste to the cooked vegetables and again heat it till it boils.
Preheat oil in a pan and add mustard seeds to the oil. When it splutters add red chillies. Add this seasoning to the boiled mixture and turn off the flame.
