Ammini Kozhukattai means small kozhukattai. They are small steamed rice balls and usually made on Ganesh Chaturthi as an offering to God. It is also made as a breakfast item.
Heat oil in a pan. When the oil is hot, crackle mustard seeds and roast the red chillies.
Add water to it and then add salt and mix well.
When the water is boiling hot, reduce the flame to medium and add the rice flour to it. Add the coconut pieces to it and stir.
Make sure no lumps remain in the above mass and it should be dry. The key point is the water and rice powder ratio should be correct.
During the stirring process, if you feel the water is less, heat water in a vessel and add to the mixture.
Prepare small balls out of the mixture. Steam the balls in a pressure cooker for 30 minutes.
Serve ammini kozhukattai with red chutney.
