Kothimbir Vadi (Savory coriander cake)

Kothimbir Vadi (Savory coriander cake) is a popular Maharashtrian snack, made from fresh coriander leaves & besan (chickpea flour) which is served as a side dish during meals. It is also a perfect tea time snack.

  1. 1 bunch coriander leaves of , washed , finely choppe
  2. 1½ Cups besan
  3. 4 Tablespoons rice flour
  4. 3 tsps ginger-garlic green chilli & paste
  5. 5 4 cloves green chilli garlic ginger ( use ' s , & 1 "
  6. ½ Teaspoon turmeric powder
  7. 1 Teaspoon cumin seeds
  8. 1 Teaspoon sesame seeds
  9. a pinch of hing
  10. 1 lemon juice of
  11. 1/4 Teaspoon baking soda
  12. to taste salt
  13. oil for shallow frying
  14. water for mixing the ingredients
  15. 2 Teaspoons oil
  16. tomato ketchup for serving

  1. Add Photo

    Grease a flat bottom vessel with oil. you can use dhokla patra (i used the cheesecake spring foam pan)

    In a separate bowl mix all the ingredients with enough water to make a thick batter.

    Pour the batter into the greased pan, steam cook for 30 minutes in a pressure cooker without the whistle. insert a toothpick or a knife, if it comes out clean the kothimbir vadi is done. Keep aside to cool unmould and cut into pieces.

    Before serving, heat oil in a pan & shallow fry the vadis on medium heat till crisp & they change their color to brown.

    Serve hot with a tomato ketchup.
