Vanilla Eggnog French toast

So after slaving over my Virgin Eggnog last night, I made a precursor to the Christmas meal. I know its still days away BUT no one can say no to this !

Ingredients

4-serving
  1. 2 Eggs
  2. 4 Tablespoons Caster Sugar
  3. 1 Cup Eggnog
  4. 1 Teaspoon Vanilla Rum or Extract
  5. 1 Tablespoon Cinnamon powder
  6. To Taste Maple Syrup
  7. 10 Bread (brown or muffin) Slice

Method

  1. Blank step
    Add Photo

    Mix the eggs, eggnog, cinnamon powder, caster sugar, vanilla (or Rum extract if you want to have a really MERRY christmas). Beat for 5 minutes until all is well mixed

    Take the bread (sliced) and dip it in the mix, both sides. Soak for about 2 minutes until all of the bread is covered in the mix

    Heat a pan with some oil / PAM spreay

    Once its hot enough, drop the slices one by one. Cook on both sides until well done / Golden Brown.

    Serve with Maple syrup drizzled over it and dust some sugar if need be.

    Tip: Adjust the sugar in the mix according to your taste. I found this quite sweet, considering you have maple syrup on top of it as well. Don't skip the cinnamon, it gives a nice break to all the sweetness.
