Red Velvet Cupcakes - Vegan

Red velvets are almost everyones all time favourite I guess. I stumbled upon this recipe for Red Velvet cupcakes while searching for vegan cupcake recipes. Since its vegan people might have the perception it may not be soft and fluffy the way the ones with eggs would be, but no, these are super moist cupcakes. Vegan and Red Velvets ,come on anyone can have it at anytime !

  1. 1 Cup Milk Non Dairy (Coconut milk)
  2. 1 Teaspoon Vinegar
  3. 1.25 Cups All purpose flour
  4. 1 Cup Sugar Powdered
  5. 2 Tablespoons Cocoa
  6. 1/2 Teaspoon Baking powder
  7. 1/2 Teaspoon Baking soda
  8. 1/2 Teaspoon Salt
  9. 1/3 Teaspoon Oil
  10. 2 Tablespoons Red food colour
  11. 2 Teaspoons Vanilla extract

    Preheat oven to 180 degree. Line cupcake pans with paper liners.

    Mix milk and vinegar and allow it to curdle.

    Sift flour,cocoa,sugar,baking powder,baking soda and salt.

    Once milk curdles add food colour and vanilla extract. Mix the dry and wet ingredients till there are no lumps. DONT beat or overmix it.

    Spoon cupcake batter into paper liners until 3/4 full.

    Bake for 15-20 minutes or until toothpick inserted in center comes out clean.

    Once cupcakes are completely cooled, frost with your favorite frosting recipe.I used cream cheese frosting as it goes well with the Red Velvets :-)
