Ingredients

  1. 2 Tablespoons Olive oil
  2. 1 Gallon water Cold
  3. 1 onion , chopped
  4. 1 leek whole (white and green), chopped
  5. 1 rib celery , chopped
  6. 1 carrot , chopped
  7. 1 tomato , diced
  8. 4 cloves garlic , sliced
  9. 1 Bay Leaf
  10. 10 Sprigs Thyme Fresh
  11. 5 Sprigs Parsley
  12. 6 peppercorns

Method

    Add Photo

    In a stock pot, heat the oil over medium heat. Add all the vegetables and sweat, with the lid on, for about 5 minutes or until the onions are softened and slightly translucent.

    Add the water and the herbs, bring to a boil, then lower to a simmer. Simmer for 30-45 minutes. Strain, cool and refrigerate.
