  1. 2 Cups bulgur hydrated
  2. 2 Cups parsley chopped fresch
  3. 30 cherry tomatoes
  4. 3 Tablespoons mint chopped fresh
  5. 2 cucumbers chopped mini
  6. 1 Cup olive oil
  7. 1 Cup lemon juice
  8. 1 Pinch salt
  9. 1 Pinch pepper

    Cook the bulgur in salted water, following the packet instructions.

    Add finely chopped parsley, mint and cucumber.

    Toss everything together in a bowl. Add olive oil, lemon juice and salt and pepper. Taste and add more lemon juice and/or salt and pepper if required.
