Chakka Varatti is a sweet jam made out of ripe jackfruit and it can be preserved for a long time. It tastes good with chapati, rice ada, dosa, etc and it is also used to make chakka ada and chakka payasam.
Separate the jackfruit flesh pieces and remove the seeds. Chop the pieces into smaller pieces. Cook it in a little water till it turns soft.
Allow the cooked jackfruit pieces to cool down and then grind it into a fine mixture.
Melt jaggery in a little water and strain it.
Take a wide mouthed vessel and add the jackfruit pulp and ghee to it and heat it. Add the melted and strained jaggery to it and keep on stirring till the consistency is very thick.
Cool it and preserve it in a bottle.
