Dried Shrimp Coconut Rice

When you are staring at a near empty fridge and all you see is a box of dried shrimps.

  1. 3 Cups Rice Steamed
  2. 1/4 Cup shallots Chopped
  3. 3 Chillies Dried
  4. 2 Green Chillies
  5. 1 Cup Coconut Grated
  6. 1/8 Cup shrimps Dried
  7. 1 Tablespoon Tamarind water
  8. 1 Teaspoon Salt
  9. 4 curry leaves
  10. 1/4 Teaspoon ginger paste
  11. 1 Tablespoon Coconut Oil

  1. Heat Coconut Oil.

  2. Add curry leaves, dried chillies, and shallots.

  3. Fry for a few minutes, and add salt, green chillies and ginger. Roast for a few minutes. Add the coconut and the dried shrimp. Saute for 5 minutes.

  4. Transfer into a processor and grind for a few seconds with tamarind water.

  5. Add this to a bowl of rice.

  6. Serve hot.
