Red Spinach Fritters with a cheese cracker crust

We had a lot of red spinach in the garden. And I didn't want to waste all the cracker crumbs. Combined, makes the perfect snack for my son's lunch box.

  1. 2 Cups Red Spinach
  2. 1/2 Cup beetroot Grated
  3. 1/2 Cup potato Grated
  4. 1/4 Cup Onions
  5. 1 Egg yolk
  6. Cumin powder
  7. Salt
  8. 2 Tablespoons Flour
  9. Cheese cracker crumbs
  10. Egg white
  11. 3 Tablespoons Butter

  1. Heat oil, add cumin powder.

  2. Add all the veggies and saute for 2 minutes.

  3. Turn off heat, add the flour and the egg yolk. Combine.

  4. Scoop a spoonfull of the mixture, drop in the egg white mixture to coat lightly.

  5. Drop in the cheese cracker crumbs to coat well.

  6. Shallow fry the fritters in butter until golden crisp.

  7. Alternately, you can bake this at 180 C for 7 minutes. Just brush some butter or olive oil on top.
