A make ahead recipe for an easy healthy banana bread for breakfast on the go



  1. 2 Banana Overripe
  2. 1 Teaspoon Baking Soda
  3. 1/2 Cup Milk
  4. 1/2 Tablespoon Vinegar
  5. 1/4 Cup Oil
  6. 3/4 Cup Sugar Dermerra
  7. 2 Egg whites
  8. 1 Teaspoon Vanilla Extarct
  9. 1/2 Cup Flour
  10. 1 Cup Whole Wheat
  11. 1/2 Teaspoon Cinnamon Powder
  12. 1 Teaspoon Baking Powder
  13. 1/4 Teaspoon Salt

  1. Add Photo

    Preheat oven to 180 degrees celsius

  2. Add Photo

    Add the vinegar to the milk and keep aside for 10 minutes to make the buttermilk

  3. Add Photo

    Bowl 1 - Mash the overripe banana with the baking soda and the buttermilk

  4. Add Photo

    Bowl 2 - Whisk together the oil, sugar, egg whites and the vanilla extract

  5. Add Photo

    Bowl 3 - Whisk together the flour, whole wheat, cinnamon powder, baking powder and salt

  6. Add Photo

    Combine the contents of bowl 3 with bowl 1 and then add the contents of bowl 2. Mix gently. Be careful not to overmix/overstir

    Pour into a prepared (well buttered) loaf tin

    Bake for 45mts till it passes the skewer test (toothpick inserted in the centre of the cake should come out clean)
