Elvis Presley's Favourite Pound cake (with a twist)

  1. 300 Grams Flour
  2. 200 Grams Butter
  3. 350 Grams Sugar
  4. 3/4 Teaspoon Salt
  5. 230 Millilitres Heavy Cream
  6. 2 Teaspoons Vanilla Extract
  7. 8 Eggs

    Mix the flour and salt. Sift the mixture three times and keep aside.

    Grease a 10 inch bundt pan with butter and then dust with some flour, knocking out excess flour. Keep aside.

    Cream the butter. Add the sugar and then beat the mixture till light and fluffy (if beating by a handheld mixture, about 8-10 mins).

    Add eggs one at a time and beat after each addition. Beat in the vanilla extract.

    Add half the flour, then the full cream and then the rest of the flour (at low speed). Scrape down the sides, and the beat the mixture at medium-high speed for about 5 mins.

    Add this mixture to the prepared pan and place in a cold oven. Raise the oven temperature to 180 degrees and bake for 50 mins - 1 hour, checking after 45 mins to see if a toothpick inserted comes out clean.
