Pea soup with mint and ginger

This light and very tasty pea soup recipe.When I cooked the soup myself for the first time, I was swept off my feet. This soup is a real treat on the first chilly autumn days.

Ingredients

4-serving
  1. 1 onion
  2. 1 Clove garlic
  3. 1 ginger , thumb - sized
  4. 1 Tablespoon olive oil
  5. 400 Grams peas
  6. 50 Grams mint
  7. 750 Millilitres vegetable stock
  8. 1 Pinch salt
  9. 1 Pinch pepper , freshly ground
  10. 1 Pinch nutmeg , freshly ground

Method

    Sweat onion, garlic and ginger with some oil in a pot.

    Finely chop the mint and put it into the pot together with the peas.

    Add vegetable stock and let it simmer until peas are soft.

    Take out some peas, purée the rest and season to taste.

    Put some peas into each soup plate and fill up with soup. Garnish with mint leaves.
