Zucchini + sweet potato fritters

these light + healthy fritters are great for breakfast, lunch or dinner

Ingredients

6-serving
  1. 2 zucchini , medium-sized , grated
  2. 1 sweet potato , medium-sized grated
  3. 4 green onions , minced
  4. To Taste lemon zest
  5. handfuls 2 mint (or other herb, cilantro works well)
  6. 1 egg white egg , or substitute
  7. 2 Tablespoons coconut flour
  8. 2 Pinchs salt
  9. coconut oil

Method

  1. Add Photo

    In a bowl, mix zucchini, sweet potato, onions, lemon zest + mint

  2. Add Photo

    In a small bowl, mix together egg, coconut flour + sea salt

  3. Add Photo

    Combine egg mixture with zucchini mixture

  4. Add Photo

    Warm a large skillet over medium-low heat. when hot, add coconut oil to coat the bottom of the pan

  5. Add Photo

    Spoon the mixture into the pan in desired sized fritters. cook on each side until brown (about 3 - 4 minutes)

  6. Add Photo

    Serve warm or at room temperature
