Slice the onions into fine half moon rings. Put the onions with the lime concentrate and soak for 10 minutes
Meanwhile dice up the watermelon and feta cheese into almost similar size cubes. Place in a large bowl
Pour the onion & lime mix over this and mix all by hand as gently as possible trying not to mush / break the cheese
Chop the parsley leaves and mix well with the above
Chill for atleast 20 minutes and serve with crushed black peppercorn as per taste
