Pumpkin, Beans and Potato Casserole

Simple, easy, comforting and hearty. Need I say more? Apologies for the sad pic above. Its so much more easier to cook, eat and clean up than get a single good shot of the dish you made.

  1. 500 Grams Pumpkin , Diced
  2. two 300 Gram Beans , Snapped in
  3. 3 Potatoes , medium-sized , diced
  4. 3 Tablespoons Butter , melted
  5. 2 Teaspoons Pepper , powdered
  6. To Taste Salt
  7. 3/4 Cup Milk
  8. 100 Grams Cheddar Cheese , shredded
  9. 2 eggs
  10. 1 Onion , sliced

    In a large bowl, toss together the vegetables, pepper powder, salt and butter together.

  2. Add Photo

    In an oven preheated to 375 degrees Fahrenheit, bake the veggies for 35 minutes.

    While the veggies are baking, whisk together the cheese, milk and eggs together.

  4. Add Photo

    At the end of 35 minutes, remove the veggies from the oven and pour the cheese mix all over it. Return to oven for a further 25 minutes or until the potatoes are all well cooked.
