Spinach Muffins

What better way to sneak veggies into a toddler's tummy than this..My son however smelled a rat when he saw how willingly I was giving him the muffins so I tricked him with a little nutella on top as the frosting.

Ingredients

  1. 1 Cup Spinach leaves
  2. 1 Egg
  3. 2 Tablespoons Oil
  4. 0.5 Cup Apple Sauce , Unsweetened
  5. 0.5 Teaspoon Salt
  6. 0.5 Teaspoon Baking Soda
  7. 1 Teaspoon Baking powder
  8. 1.5 Cups Plain Flour
  9. 2 Teaspoons Vanilla Essence
  10. 0.3 Cup sugar

Method

  1. Blank step
    Add Photo

    Steam you spinach and let it cool. Then, in a food processor or a blender mix together the spinach, eggs, applesauce, vanilla essence, sugar and oil. Pour into a large bowl.

    Put all the other ingredients in to another bowl and mix well.

    Now slowly mix the the dry ingredients into the wet mix. Combine well.

    Scoop into a lined muffin tin and bake for 12 minutes in an oven pre heated to 350 degree Fahrenheit.

    You can substitute the spinach for other veggies too. Remember to steam them first though.
