Chicken and Gnocchi Soup

A creamy soup with just the right amount of chicken, vegetables, and gnocchi. If you like Olive Garden's version, try this!

Ingredients

  1. 2 Tablespoons Butter
  2. 1 Tablespoon Olive Oil
  3. 1 Cup Onion , diced
  4. 4 Cloves Garlic , minced
  5. 4 Tablespoons Flour
  6. 1 Quart Milk Whole
  7. 1 Cup Carrots , shredded
  8. 1 Cup chicken breast , cooked diced
  9. 2 Cups Chicken broth
  10. 1 Pound Potato Gnocchi
  11. 1 Cup Spinach
  12. 1/2 Teaspoon Thyme
  13. 1/2 Teaspoon Parsley
  14. 1 Teaspoon Black Pepper
  15. 1/2 Teaspoon Red pepper
  16. 3 Tablespoons Parmesan cheese

Method

    In a large saute pan heat the butter and olive oil over medium heat. Add in the onion and garlic and saute for 5 minutes.

    Add in flour and milk. Cook for 3-5 minutes or until thickened.

    Add carrots and chicken. Stir well until combined and add chicken broth. Cook for 5 minutes.

    Add gnocchi, spinach, thyme, pepper, and parsley. Simmer for 10 minutes.
