  1. 2 Pounds Ground Beef
  2. 2 spanish onion , small - sized , diced
  3. 1 bell pepper , small - sized , diced
  4. 2 Bay leaves
  5. 1/2 Tablespoon oregano
  6. 2 Tablespoons tomato paste
  7. 6 Cloves garlic
  8. 2 Tablespoons olive oil
  9. 1 1/2 Cups olives spanish green
  10. 1/2 Cup nonpareil capers

    Add Photo

    In a large saucepan, heat 2 tablespoons olive oil. Add green pepper and onion and saute until translucent, then add the garlic and saute for and additional minute.

    Add tomato paste, Bay leaf, and oregano and cook for 3-4 minutes. Put in the ground beef, olives and capers,and let them simmer.

    After about 40 minutes, taste and adjust seasonings. It important to note we do not drain the fat or not all of it, depending on amount. There needs to be a fair amount of fat in the meat.

    I choose to make mine early in the day and allow it to sit over a low heat.
