Carrot & Kalamata Olive Linguine

Very simple pasta for vegetarian pasta lovers....

  1. 500 Grams Linguine
  2. 2 Carrots , julienne cut
  3. 3 Cloves Garlic , finely chopped
  4. 1/4 Cup Kalamata Olives
  5. 1 Onion , medium-sized , thinly sliced
  6. 2 Tablespoons Tomato paste
  7. 1/2 Teaspoon Oregano
  8. 1/4 Teaspoon basil , dried
  9. Parmesan Cheese , grated
  10. To Taste salt

    Add Photo

    Boil water in big vessel and add salt and 1 teaspoon oil and cook pasta as per the instruction on the packet..

    In medium size non stick wok, heat oil and saute carrots, onions and finely chopped garlic.

    When the Onions becomes slightly brown and the carrots are cooked, however still crunchy, add Olives and tomato paste and saute till the tomato paste heats through.

    Add cooked linguine, dried basil,oregano and toss it.

    Turn off the stove. Use grated parmesan cheese for seasoning.......
