My default French toast recipe was a simple dip in eggs and cook. This was just as easy and added more flavor. A definite repeat recipe for breakfast.
Make sure to use day-old bread. If your bread is still soft you can put it in the toaster for a little to harden it (but don't brown it!).
Beat the eggs in a shallow bowl. Mix in the milk, sugar, and vanilla.
Dip bread in the mixture for a few seconds on each side and cook on a hot griddle until golden brown on both sides and cooked through.
Serve with maple syrup.
