Noodles in Coriander and Cashew pesto

You know that time when you decide not to enter the kitchen and decide to remain in yours jammies and eat leftovers for the day and then an unannounced guest drops in for lunch? I had one of those days today. Nothing on the table, nothing on the stove and 3 bellies to feed. Enter Noodles in Coriander and Cashew pesto and the day is saved. Super delicious with minimum effort. Its all the pesto actually. The noodles is baking in the pesto's glory.

Ingredients

  1. 1 Noodles Spaghetti /
  2. 1 Bunch Coriander
  3. 1/4 Cup Cashews
  4. 2 Tablespoons Olive Oil
  5. 1/4 Cup Parmesan , grated
  6. 1 Teaspoon Pepper Powder
  7. 2 Teaspoons Garlic , minced
  8. Basil leaves

Method

    Add Photo

    Cook the noodles according to the instructions on the pack and drain it. Keep aside

    In to your food processor, add the other ingredients except olive oil and grind together. Slowly add the olive oil through the funnel of the processor until it all comes together to form a paste. Regulate the oil to reach the desired consistency. I ended up with a semi-thick paste.

    Toss the noodles with the pesto.

    Pretend like you did a lot of work and trick your husband to helpi you with doing the dishes. :)
