Wash sweet potato. Remove peel if desired. Cut into circular rounds, and cut into semi-circles.
In a large frying pan, heat the coconut oil. Fry the sweet potato in the hot oil, sprinkling salt and freshly ground black pepper on both sides. Fry for 2-3 minutes each side, and move to a bowl when insides are soft.
Cover with lime juice and serve. This dish is excellent when served as a side to a meat dish, but is also delicious on its own.
