I was getting bored with the same ol flavours going into my son's lunch box. So I thought I will make poha, but with pizza flavours.
Wash and drain the rice. Fluff it up with a fork and add lemon juice and salt.
Heat oil, add basil leaves. Add onions, capsicum, tomatoes and olives and saute for 3-5 minutes.
Add the rice, oregano, and chilli flakes and cook for 2 minutes.
And it's ready!
