Heat 2 tablespoons of oil in a pan, add cumin, peppercorns, shallots, coconut, curry leaves and saute for 2 - 4 minutes. Allow it to cool, add cashew nuts and grind it. Keep the ground paste aside.
In a pan, heat the remaining oil. Add mustard (after it splutters) add cinnamon, cloves, bay leaf, fennel seeds, Ginger Garlic Paste,chopped tomato and saute for 2 mins.
Add ground paste, garam masala, chilli powder, water, boiled chicken and salt. Allow it to cook in low heat for 10 - 15 mins. When the curry becomes thick, add chopped coriander leaves and serve it with plain rice.
You can also prepare it as a side dish for dosa, idly, naan, poori and paratha.
