Orange Flavored Spice Bread

  1. 225 Grams All purpose flour
  2. 6.25 Grams Yeast
  3. 6 Grams Salt
  4. 12.5 Grams Sugar
  5. 10 Grams Gluten
  6. 1/2 Teaspoon Milk Powder
  7. 15 Grams Margarine
  8. 135 Millilitres Water
  9. 1/2 Teaspoon Black pepper , grounded
  10. 15 Millilitres Orange crush
  11. 15 Grams Orange zest
  12. 4 Drops Orange emulsion

Method

  1. Add Photo

    Sieve the flour, gluten and milk powder together and keep aside.

  2. Add Photo

    Prepare salt solution with salt and half the measured amount of water and sugar+yeast solution with the remaining amount and sugar+yeast.

  3. Add Photo

    Add the grounded black pepper to the flour followed by the sugar+yeast solution and knead well.

    Next, add the salt solution, orange crush, orange zest and orange emulsion, kneading well to combine

  5. Add Photo

    Add the margarine and mix well until gluten is formed. Keep it aside for around 5 minutes

  6. Add Photo

    Gently deflate the dough and let it rest for another 5 minutes.

    Place the dough in a greased mould and bake it at 180 degree Celsius for 25 minutes
