Cauliflower carrot croquettes

When your toddler suddenly refuses to eat cauliflower, I had to sneak em in.

Ingredients

  1. 1 Cauliflower
  2. 2 carrots
  3. 1 Onion
  4. 3 Garlic
  5. 1/2 Cup Bread crumbs
  6. Cumin Seeds
  7. Pepper
  8. Salt
  9. 1/2 Cup Chicken stock

Method

    Add Photo

    Heat 1 tbsp. oil and once oil becomes hot, put chopped onions garlic, and cumin seeds in it.

    Fry till onions become transparent, add grated cauliflower, and carrots and pepper let it cook through in chicken stock

    I added chicken stock mainly to hide the cauliflower flavour. It's not necessary.

    Once cooked through, add the breadcrumbs and shape into balls and store in the freezer.

    I don't like to fry them, so I just use a skillet and cook them to crisp on a medium flame. If you like, you can add a dollop of butter.
