Moist, light, and fluffy white cake with Meringue Icing
Pre heat the oven to 180 degree cel.Greese the baking Pan with Butter.
Mix the flour, baking powder and baking soda and sift them three times.
Separate the egg whites in a mixing bowl.Yolks are not used in this cake.Beat the egg till its foam.
Slowly add sugar into the bowl and continue to beat until the sugar is dissolved and till its soft & peak.
In another bowl whisk butter till its soft.Add sugar till the mixture is fluffy.
Continue to whisk adding the sifted flour and milk at a time.Mix vanilla extract.
Add the beaten egg whites and fold it gently.Pour the batter into the baking tray.
Bake it for 30 to 35 mins
For meringue icing whisk egg whites in the bowl over a saucepan of simmering water until very stiff.
In a separate pan, dissolve the sugar in the water and boil for 5-10 minutes until the liquid is thick
Pour the syrup over the egg whites, whisking all the time.
Return the bowl to above the saucepan of simmering water and continue to whisk for 10-15 minutes or until the icing is white, very thick.
