Schezwan Noodles

Indo-Chinese-Italian fusion with home made Schezwan Sauce.



  1. 200 Grams Noodles
  2. 1 Tablespoon Garlic (Chopped)
  3. 2 Tablespoons Oil
  4. 1/2 Cup Onion (chopped)
  5. 1 Cup Veggies (Grated Carrot,Cabbage,Capsicum & Mushroom)
  6. 1/2 Tablespoon Red Chilli Sauce
  7. To Taste Spring Onion (chopped)
  8. To Taste Salt
  9. 4 Red Chilli
  10. 1 1/2 Tablespoons Vinegar
  11. 2 Tablespoons Ginger Garlic & (each)
  12. 2 Teaspoons Soya Sauce
  13. 1 1/2 Teaspoons White Pepper
  14. 1 Pinch Sugar
  15. 1 Tablespoon Oil

  1. Add Photo

    For Schezwan Sauce, soak red chilies, ginger and garlic in vinegar for 30 minutes; make a smooth paste by adding water.

    Heat the oil in a pan, add ground paste and after 2 minutes, mix in little water, soya sauce, white pepper and sugar. When oil floats on the mixture, transfer it to a bowl.

    Cook noodles with 1/2 tsp of salt in boiling water for 12 minutes and drain the excessive water by transferring noodles into Colander.

    Heat the oil, add garlic and saute for a few seconds, the add onion and saute for a minute. Now add veggies and saute until its half-cooked.

    Mix in red chili sauce, prepared schezwan sauce and saute for 2 minutes in low flame. Add salt, cooked noodles and mix it. Garnish with spring onions and serve hot!!
