Potato, capsicum frittata

I inspire this dish from a television show and i make some changes also. This is very tasty snack.

Ingredients

  1. 1 Cup potato half boiled chopped
  2. 1 Cup capsicum Green and red chopped
  3. 1/2 Cup Tomato chopped
  4. 1/2 Cup Coriander leaves chopped
  5. 3 Eggs
  6. 1 Teaspoon Black pepper powder
  7. To Taste salt
  8. 2 Tablespoons oil
  9. 1/2 Cup onions chopped

Method

    Take a bowl add eggs, pepper powder and salt beat them well and kept a side.

    Take non stick pan and grease it with oil, after heat the oil add potato, tomato and capsicum, after little fry around them near and pour the egg mix on them carefully by covering the vegetables.

    Add coriander leaves also. After one side cooked, turn it in to other side carefully, that side also cooked well, turn it in to the serving plate and cut it in to pieces and serve it.
