Fish veggie croquettes

A healthy snack for your toddler that lets you sneak in fish and a lot of veggies.

Ingredients

6-serving
  1. 1 Cup fish of your choice fish Steamed
  2. 1 Cup Drumstick leaves (or any leafy green you like)
  3. 1 Potato , boiled
  4. 1 Carrot
  5. Cabbage
  6. bread Fresh crumbs
  7. Onion
  8. Pepper
  9. Garlic
  10. Ginger

Method

    Add Photo

    Steam fish in salt and turmeric powder.

    Clean all bones and crumble the fish.

    In a pan, heat some oil and add onion, ginger, garlic and saute for a few minutes.

    Add grated carrot and cabbage and the drumstick leaves and leave it closed till it cooks through. Add salt.

    Finally, add the boil potato, pepper and fresh bread crumbs and bring the mixture together.

    The bread crumbs should help in the binding. I don't like to waste an egg for binding purposes.

    Roll into discs and stack them up for your freezer.

    Everyday during snack time, pull out a couple and just heat it up over a skillet with some butter.
