Baked salmon with mango sauce

This was my first attempt at trying something savory with mango and it worked beautifully! I still have some leftover mango sauce that I can't wait to use with prawns or scallops, do give it a go! :)

  1. 4 - 6 oz salmon fillet of 2
  2. 1 mango Ripe
  3. 1 Teaspoon garlic freshly minced
  4. 1 Teaspoon ginger freshly minced
  5. 1 Tablespoon Soy sauce
  6. 1 Tablespoon Lemon juice

    Preheat oven to 450 F. Line a baking tray with foil. Don't miss the lining, believe me, it gets so much easier to clean the tray later :)

    Cut the mango in small pieces.

    Take about 1/4th of the mango pieces along with the ginger, garlic, lemon and soy sauce and process together till you get a thick sauce. Add salt and pepper to taste.

    Coat the mango sauce on the salmon generously and put the salmon on the foil.

    Bake in the preheated oven for 11-12 minutes, depending on the thickness of the salmon.

    While the salmon is baking, you can prepare a salad with the rest of the mangoes and any other ingredients that you prefer. I used spinach, avocados, mangoes, red onions and cucumbers with a balsamic-honey dressing.
