  2. 500 millilitres Wood chips
  3. 125 millilitres chili powder Ancho
  4. 15 millilitres cumin Ground
  5. 15 millilitres coriander Ground
  6. 15 millilitres Mustard Dry powder
  7. 10 millilitres salt Coarse
  8. 5 millilitres Cayenne
  9. 5 millilitres oregano Dried
  10. 250 millilitres Brown sugar
  11. 60 millilitres Orange juice
  12. 60 millilitres Cider vinegar
  13. 60 millilitres Soy sauce
  14. 30 millilitres Canola oil
  15. two limes Juice of
  16. , 2 Clove Garlic minced
  17. 2 Chipotle in adobo
  18. 30 millilitres sauce Adobe
  19. 125 millilitres cilantro Fresh
  20. 1/2 red cabbage head
  21. 1/2 cabbage head green
  22. 1 Carrot
  23. 125 millilitres Sour cream
  24. 60 millilitres Mayonnaise
  25. 5 millilitres Celery seed
  26. 5 millilitres Cider vinegar
  27. 15 millilitres White wine vinegar
  28. to taste Sugar

  1. Cut each half of cabbage in half again. Slice thinly. Grate carrot. Add cabbage and carrot to a large mixing bowl.

  2. In a small bowl, add the rest of the slaw ingredients, except sugar. Stir to combine. Taste. Add sugar to taste.

  3. Pour sour cream mixture over cabbage and carrot. Stir well to combine. Cover and refrigerate.

  4. Cover wood chips with water and allow to soak for at least 30 minutes. Drain and place in an aluminum (disposable) roasting pan or pie plate. Cover with foil and poke a few holes in the top.

  5. In a small bowl, combine the Rub ingredients. Set aside.

  6. In a small pan over medium heat, combine all Mop ingredients  except cilantro. Stir to dissolve sugar. Once sugar is dissolved, allow to cool. Pour cooled mop sauce into a blender and add cilantro. Puree. Pour into an aluminum pie plate. Set aside.

  7. Rub ribs with spice rub. You can put them on the grill right away or wrap in plastic wrap and refrigerate overnight.

  8. On your gas grill, put wood chips over medium-low heat on one side of the grill. Close the lid and wait for smoke.

  9. Once you have smoke, put your mop Sauce on the grills warming rack.  You may need to dilute with water so it doesn't boil away. Place the ribs on the other side of the grill over no heat.

  10. Allow to smoke/cook for 3 hours.

  11. Lift the lid and light your other burners. Turn everything up to medium-high. Remove smoke try and mop sauce.

  12. Grill ribs for about 10 minutes mopping each side a few times. Remove from heat and allow to rest for 10 minutes.

  13. Serve with slaw and enjoy!
