Ingredients

  1. 1 cup Cashew nut (chopped)
  2. 2 cups Rum brandy or
  3. 1/2 kg Sugar
  4. 1 1/2 cups Water
  5. 5 Clove
  6. 3/4 tsp Cinnamon
  7. 1/2 tsp Nutmeg
  8. 500 kg Flour
  9. 2 tsps Baking powder
  10. 1 tsp Baking soda
  11. 1/2 kg Butter
  12. 1/2 kg sugar Powdered
  13. 10 Egg
  14. 1 tsp Vanilla essence
  15. 3/4 cup Orange juice

Cooking Instructions

    Soak the fruits in brandy or rum for at least a month.

    Grease and line 2 round pans and preaheat the baking oven to 180°.

  3. 3

    Heat and melt the sugar in a pan. When the color of the melted sugar become dark brown, remove from  heat and add 1 1/2 warm water.  Bring it back to the fire and boil for few miniutes and remove from the fire.

    Sift the flour, baking soda, baking powder and spices together and keep it a side.

    Beat butter and sugar very well and then add eggs one by one beating well. Then add flour and gently fold it.

    Finally add cooled caramel, vanilla, orange juice and soaked fruits and combine very well.

    Transfer the cake batter in to the prepared pans and bake the cake in preheated oven and bake for approx 1 hour.

    Remove from oven and decorate as you may wish including icing.
