Tomato Basil Pasta

There is usually a night in the work week, when you really don't feel up to cooking. Your mind starts thinking about getting some takeaway from the restaurant down the road and you remind yourself that you had shopped for the whole week and that's when this recipe comes in handy. I made this on a Wednesday night, it was quite cold outside, and I wasn't really in the mood to spend a lot of time in the kitchen, so as soon as we got home, I put everything in the pot and went off to give the toddler a quick bath, came down the stairs to the kitchen and dinner was ready. This is a great kids meal too, I did not sprinkle the pepper flakes until the very end, because I wanted her to try some. Miss D loved it and kept asking for more! YAY!!!! .... The ingredients are pretty basic, and should be in most of your pantries, I love the flavour of basil, so I totally enjoyed this real simple, but very flavourful and filling meal.  Hope you enjoy this one pot wonder meal

Ingredients

  1. 1 packet linguine pasta of
  2. 1 can tomatoes of diced (capsicum or garlic flavoured)
  3. 1 Onion sliced
  4. 4 1/2 cups Stock
  5. 4 cloves garlic minced
  6. 2 large sprigs basil of chopped
  7. 1/2 tsp red pepper flakes
  8. 2 tsps oregano dried flakes
  9. 2 tbsps olive oil
  10. Salt Pepper &
  11. Parmesan cheese

Cooking Instructions

    In a large pot, place the pasta, the can of tomatoes, onion, garlic, and basil. Pour the vegetable stock, add the pepper flakes and oregano. Drizzle a couple of tablespoons of olive oil

    Cover the pot and bring it to a boil. Reduce to a simmer and allow it to cook (with the lid still on) for about 10mins. I cooked it till all the liquid had evaporated, and you will see how all the ingredients in the pot has cooked too

    Season with salt and pepper. Give it a quick stir

  4. 4

    Garnish with parmesan cheese and some more chopped basil

  5. 5

    Serve straight away!
