Veg Manchurian
Veg Manchurian is a very easy to do Indo-Chinese dish. It is usually made with veggies such as carrot,cabbage,beans,capsicum. Here in my recipe I changed it a bit by adding minced soya granules since I love Soya and it is protein packed. I have also added one chicken stock cube for that extra zing.
Ingredients

2 cups finely chopped Vegetables

1/2 cup soya granule mince

2 tbsps All-purpose flour

2 tbsps cornflour

1 Chicken stock (optional) cube

1 tbsp ginger-garlic green chilli - paste

1/2 tsp soy sauce
-
1/2 tsp black pepper powder

to taste salt

oil for frying

1 1/2 tbsps garlic finely minced

1/2 tbsp ginger finely minced

2 chillis finely chopped green
-
1/2 tsp red chilli powder (preferably Kashmiri)

2 tsps soya sauce
-
1/2 tbsp chilli sauce

2 tbsps tomato sauce
-
as required salt

2 tbsps spring onion finely chopped
Cooking Instructions

Soak the soya granules in warm water for about 10-15 minutes. Drain out the water and squeeze as much as water as possible from the soya granules.Now mince this in a food processor

Finely chop all the veggies(capsicum, cabbage, carrot, beans and spring onion whites) and microwave it on high for about 3 minutes

In a bowl, combine all purpose flour, cornflour, salt, ginger-garlic-green chilli paste, pepper powder, soy sauce, Chicken stock cube,salt,soya mince and all the finely chopped vegetables.Give it a good mix and make small balls from the mixture.

Heat oil in an aebleskive/appam pan and drop the dumplings in the oil and fry till it turns golden brown.(you can also deep fry the veg balls)

Heat oil in a large wok and once the oil is hot add the chopped garlic, green chillis and ginger and stir fry on high for a few second,next toss in the spring onion

Reduce to medium heat and add soya sauce, tomato ketchup, chilli sauce and vinegar. Mix well and cook for 2 mts. Add the vegetable balls and stir fry for another 3 mts. They should retain their crunch

Turn off heat. Garnish with the chopped spring onion greens
