Spinach & Tomato Tortellini

I have been at work for more than two weeks now, but for some reason, I still feel like I am on holiday mode. Spent three weeks travelling between the South and North Island here in NZ with the family, so its been slow getting back into it. As you probably already have noticed, I went a bit quiet on the blogging front, but trust me I am now baccccckkkkk and I've got a work night meal idea... This is great if you are still recovering from holiday mode, and don't want to do a heck lot of cooking to put a meal on the table. Absolutely minimal chopping
Enjoy this easy dinner idea ... I will try to get a relatively complicated one as the next post just to make up haha

Ingredients

  1. Spinach Ricotta Tortellini &
  2. 1 can tomatoes diced
  3. 1 cup spinach chopped
  4. 3 cloves garlic mashed
  5. 2 tsps onion flakes
  6. 1 tsp chilli dried flakes
  7. 1 tsp basil dried
  8. 1 1/2 cups cream
  9. 2 tbsps all purpose flour
  10. 1/4 cup parmesan grated
  11. to taste Salt Pepper and
  12. Oil

Cooking Instructions

    Bring a pot of water to a boil, and cook the tortellini until they are al dente. The package I bought said 7mins, so once the time had passed, I drained it

    While the tortellini was cooking, I made the sauce

  3. 3

    In a pan, add the mashed garlic cloves to the oil and saute until it is fragrant. Next add the can of tomatoes, the chopped spinach, basil, onion and chilli flakes and salt and pepper

    Give it a quick stir and cook on medium heat until it is all bubbly

  5. 5

    While this was cooking, I mixed the cream and all purpose flour and whisked it until it was smooth

    Add this mixture to the sauce and the parmesan cheese. Reduce the heat to low and allow it to cook until the sauce thickens

  7. 7

    Finally add the cooked tortellini and mix well to combine

  8. 8

    Serve! A side salad will go well with this!
