Ingredients

  1. 2 Potatoes large
  2. Oil to deep fry
  3. to taste Salt
  4. 2 teaspoons Oil -
  5. 1/2 teaspoon Cumin seeds -
  6. - 4 pods Garlic
  7. 4 - 6 Shallot -
  8. 1 Curry leaves - stalk
  9. 1 teaspoon Ginger paste -
  10. 3 chilly Green -
  11. 1/2 teaspoon Turmeric powder -
  12. 1 teaspoon chilly Red powder -
  13. 1 teaspoon Coriander powder -
  14. 1/2 teaspoon Garam masala powder (optional) -
  15. 1 teaspoon Coriander leaves (optional) -
  16. 1 to 2 tablespoons Water -

Cooking Instructions

  1. 1

    Cut potatoes into small cubes and deep fry them till they turn golden brown

  2. 2

    Strain excess oil. Sprinkle some salt over the fried potatoes

  3. 3

    In a pan, heat 2 teaspoons of oil. Add cumin seeds. When they pop, add sliced garlic pods

  4. 4

    Add sliced shallots and curry leaves

  5. 5

    Add chopped green chillies and ginger paste. If you don't use paste, add 1/2 teaspoon of finely chopped ginger. Add little salt to taste

    Add the powders and mix well till the rawness is gone

    Add water to this masala. Now add the fried potatoes and mix well

  8. 8

    Check salt level and add if required

  9. 9

    Close the pan with a lid for about 1-2 minutes in simmer heat so that the potatoes blend with masala

  10. 10

    Serve hot with rice, roti or bread
