Thenga Chammanthi podi is one of the most popular and traditional side dish of Kerala cuisine.This podi is usually prepared using roasted coconut and some spices.This goes well with kanji(rice porridge).
Heat a pan. Dry roast grated coconut and all other ingredients except tamarind and salt till dark brown in color.This takes about 20-25 minutes on medium flame..
Once it is done,remove from fire. Let it cool.Add tamarind and salt to it and stir well. Grind it into a coarse powder.
Don’t use oil while roasting
