Line your muffin trays with chicken salami slices.
Fill the molds with sauted veggies (of your choice) i added mushrooms, red & yellow capsicum spring onions & green chilles.
Then pour the beaten egg mixture over the veggies.
Top it off with grated cheese and garnish with some chopped cilantro.
Bake in the pre heated oven at 190 C for 10 mins. Slowly remove from the muffin tray and serve hot with toast
