A Mallu Style chicken dry fry

  1. 500 Grams Chicken (cut into small pieces)
  2. 2 Onions Large
  3. 2 Tomatoes
  4. 4 Green chillies
  5. Ginger
  6. Garlic
  7. Curry Leaves
  8. 1 Tablespoon Chilli powder
  9. 1 Tablespoon Turmeric powder
  10. 1 Tablespoon Coriander powder
  11. 1 Teaspoon Jeera cummin / powder
  12. Salt
  13. 2 Tablespoons Coconut Oil

    Make a paste of the Chilly,Turmeric, Coriander & Jeera powders

    Marinate the chicken in this paste add a dash of salt. Keep this aside for 20 mins or more

    In a deep heavy bottomed pan heat the oil (you can use regular cooking oil or coconut oil) when oil is hot add the ginger garlic paste (freshly crushed is best)

    Once the garlic & ginger paste is cooked add the marinated chicken and keep stiring till chicken is half cooked

    Add the chopped onions and tomatoes and green chilli and cover and cook on low flme till done. You can add water if required, Add salt as per your taste

    Once chicken is cooked garnish with curry leaves, ginger juliennes and 2 tbs of coconut oil to give it that Mallu flavor!! =)
