Ingredients

  1. 1 cups Vegetables - cut into medium thick long slices
  2. 1/4 cup Kadala channa / - cooked  -
  3. 3. handfull Cashewnut (soaked in water for 10 mints) -
  4. 1 Tomato small -
  5. 1 Onion small - sliced
  6. 1/4 cup coconut Grated -
  7. 1/2 tspn Fennelseeds -
  8. 1 tspns Red chilli powder -
  9. 1/2 tspn Coriander powder -
  10. 1/4 Turmeric powder - tpsn
  11. 1/4 tspn Garam masala powder -
  12. Curry leaves

Cooking Instructions

  1. 1

    Heat oil in a pan.Add curry leaves.Then add sliced onion, vegetables,cooked channa/kadala and cashewnuts.Sprinkle little salt and saute well.Now simmer the flame,cover and cook.

    When the vegetables are half cooked,add the tomato,mix well,again cover and cook in low flame.

    Meanwhile,add the grated coconut,fennel seeds.red chilli powder,coriander powder,turmeric powder and garam masala to blender.

    Add little water and grind to a coarse paste.

  5. 5

    When the vegetables are cooked well,add the masala paste to it.Saute for few seconds.Now add 1/4 cup water to it.Now saute continuously till the water dries up.

    Finally,drizzle 1 tspn coconut oil on top.Mix well and remove from fire.this tastes really good with steamed basmati rice.
