Dried cherry and white chocolate muffins

A wholesome muffin with mildly sour dried cherries and chunks of white chocolate.



  1. 1 cup cherries Dried
  2. 1 cup chocolate White chip / chunks
  3. 1 - 3/4 cups All purpose flour
  4. 3/4 cup Sugar
  5. 1 cup Buttermilk
  6. 100 grams Butter
  7. 1 tsp Baking powder
  8. 1 tsp Baking soda
  9. pinch Salt a
  10. 2 nos Eggs - lighty beaten
  11. 1 tsp Vanilla essence
  12. Almond flakes (optional) For decoration

  1. Add Photo

    Preheat oven to 180 degrees.

    Soak the cherries in buttermilk and keep it aside - this will soften the cherries.

  3. Add Photo

    Sift all the dry ingredients in a large bowl  and keep it aside.

    In another bowl, cream the butter and sugar. Add vanilla and eggs and mix thoroughly.

    Take a small amount of the sifted ingredients and coat the white chocolates - this helps them in not sinking to the bottom of the cupcake pan.

    Make a well in the center of the dry ingredients and pour the buttermilk cherry mixture. Then add the sugar butter mixture and white chocolates. Mix in low speed until just blended. - DO NOT OVERMIX.

  7. Add Photo

    Pour evenly into lined/greased muffin tray(about 2/3rds full) . You may top it with almond flakes. Bake till a toothpick inserted comes out clean.(approx. 20-25 minutes.)
